Considering how nice home made bread here are some recipes.

Engineer’s Bread

A quick and easy but very tasty loaf, lovely warm with honey or Vegemite and cheese, or as toast the next day. Best eaten the day it’s made, but makes very very nice toast if some is left over the next day or 2. Cooking time 30mins, under an hour for the whole thing.

  • 1/4c rolled oats
  • 1/4c bran flakes
  • 1/4c wheatgerm
  • 1/4c wholemeal
  • 1T butter
  • 1T golden syrup
  • 1T olive oil
  • 1/2t salt
  • 400ml boiling water
  • 1T milk
  • 1T dried yeast
  • 1c wholemeal
  • 2c white flour

Add rolled oats, bran flakes, wheatgerm, and first measure of wholemeal into a large bowl. Into measuring jug, put butter, golden syrup, honey, olive oil and salt. Make up to 450ml with boiling water. Add 1T milk. Add liquid to the large bowl and mix. Add yeast mix. Sprinkle 1T of wholemeal on top and leave for 5-10min for the yeast to bubble up through it. Stir down and mix in 1c wholemeal + 2c white flour. Knead on lightly floured bench. Push dough into warmed and oiled tin, with butter paper on the bottom. Let dough rise to top of tin (15-20min in a warm place). Cook 10min at 230C then for 20mins at 200C. During cooking cover top of loaf with tinfoil or brown paper to prevent charing of the crust. Remove from tin and allow to cool, eat once temp is suitable.

  • T = Tablespoon, t = teaspoon, c= cup
  • 230*C = 503K = 446F
  • 200*C = 473K = 392F

Essential advice: You’ll quickly find once you’ve made this loaf that it has a tendency to vanish at an alarming rate. To prevent this from happening it is recommended you make this loaf when no one else is home and guard the loaf as it cools. Don’t take your eyes off it for a second! Once cool enough cut some slices for immediate eating and find a bread bag. Place the loaf in the bread bag and tie tightly to reduce the chance of the scent escaping, then find somewhere unlikely to store it draws or cub boards in your room are usually a good idea. -eonsim
